Chicken Pot Pie

Earlier this week I made a batch of PW's 'Perfect Pie Crust' so that I could try her Chicken Pot Pie recipe (and also her flat apple pie, which I'll make later this weekend). I looked for this on her website but couldn't see it. I can't post the full recipe here because of copyright but here's how mine came together. . . .

I love how PW takes you through each recipe step by step... first finely dicing the veg, this in itself was fun and enjoyable to me :-)

The pie crust is already made.... so we start the filling by sauteing the veggies, then adding the chicken. . .


You add flour to this mixture then slowly add your wet ingredients like broth, cream and wine! And end up with a lovely creamy mixture. . .


Pour this in to a pie dish and cover with your pastry. . .


Then pop it in the oven. . . (I knew I should have... but I didn't! put a cookie tray under the pie because it did spill over).



Verdict: I think I added a little too much wine! Everything about this pie was rich, from the creamy (1 full cup of heavy cream!) filling to the buttery flaky pastry. Don't get me wrong, it tasted delicious, but just a bit too rich if I'm honest. Overall very 'rich and decadent' for a chicken pot pie. Would I make it again? Yes, but not for a while and less (or no) wine next time.

I wanted us to do this together. Maybe I could just post one of her recipes on my blog when I cook something of hers. You did a good job.

Looks yummy! I have tried some of her recipes. Entered some of her contests, too-but no win so far. lolIt was a hoot meeting her in Atlanta though.

My husband and I tend to love rich foods, so this sounds great to me. I love how the creamy filling is just oozing out. Looks fantastic!
I'm anxious to see the apple pie.
